Ingredients

  • 1 Medium Cabbage
  • 1 Large Carrot
  • 1 Cup Dried Wood Ear Mushrooms
  • 400 Grams Glass Noodles
  • 1 TSP Garlic Powder
  • 1 TBSP Sesame Oil

Sauce

  • 1 Bottle Sweet Chilli Sauce

Wrapping

  • 1 Package Spring Roll Wrapper

Instructions

  • 1. Soak wood ear mushroom in water 1 hour before.
    2. Follow manufacturer's method for glass noodles. Some you soak in hot water others you cook.
    3. Once glass noodles cook, toss in sesame oil and leave in strainer to let excess moisture to drain.
    4. Julienne rehydrated mushrooms, carrot and cabbage.
    5. In medium bowl, mix noodle, garlic powder and vegetables.
    6. Set aside a small bowl of water
    7. Open spring roll package and leave under slightly damped towel, so as to not dry them out
    8. When rolling spring rolls have a corner facing you, fill the middle.
    9. Fold corner closest to you over the filling, than bring in both left and right corner in.
    10. Roll the rest into cylinder.
    11. Pre-heat fryer to 325F
    12. Fry until crispy golden brown.
    13. Serve with Sweet Thai Chilli Sauc
